Hot Roast Beef Sandwiches
There has been a lot of travel talk on here lately and I’m way overdue for some food talk.
So, you know those nights when you don’t feel like creating a real dinner but you want to fake it enough that your family still loves it?
Sandwich Night is the solution. And not just any sandwich will do.
Your family will totally be on-to-you if you just throw out two pieces of bread, a slab of deli meat, and a slice of cheese.
But, if you slightly tweak it, they’ll think Sandwich Night is better than Pizza Night!
I use Boar’s Head Londonport Roast Beef and Horseradish Cheddar.
To heat up the Roast Beef, bring a little bit of water to a simmer in a nonstick pan:
Add the meat to one side:
Then cover with aluminum foil allowing the steam to come out:
It only takes a couple of minutes to get it warm. Wrap the Roast Beef in the aluminum foil until you are ready to assemble the sandwiches.
While you are doing this, sauté the onion in a little butter and olive oil:
Season with salt after they have been cooking for about 5 minutes.
Remove the sautéed onion and add the mushrooms to the onion flavored butter and oil:
You may need to add more butter and oil.
Season the mushrooms with salt but wait until they are almost finished cooking.
Salt brings out moisture, so if you salt the mushrooms too soon they will steam rather than sauté.
Time to assemble.
I use these onion kaiser rolls from my grocery store deli:
I like to drizzle olive oil on the tops.
Add several slices of warm Londonport:
Then add the sautéed onions and mushrooms:
And then top with a generous amount of Horseradish Cheddar:
Toss the sandwiches into a hot 500F oven and wait for the magic.
It won’t take long so don’t go far. You will have enough time to clean up some things in the kitchen but not enough time to take a shower.

It’s a must for roast beef.
I do not get a kickback from Boar’s Head but you’d think so considering how much I talk about them.
They have great products. There is no denying it.
So you should just trust me. Their horseradish sauce makes this sandwich complete.
I like to add some to my bun AND to my plate.
I dip before each bite.
The only thing you’ll need to worry about is the occasional Horseradish Nose Burn.
