French Onion Soup

Me too!

I saw this recipe on Pinterest the other day — it’s the sandwich of French Onion Soup!

So I immediately went to the store and made it for dinner.

Ingredients: Onion, Gruyère, butter, and bread. I used Five Grain Sourdough bread from the Publix bakery.

Chop the onions and add them to a pan with butter.

Cook the onions over low heat until they are nice and caramelized.

Next time, I will use a bigger onion.

Slice the bread and add two pieces to a buttered pan. Swish it around and soak up as much of the butter as you can.

You could also just butter the bread. I like to swish.

Add slices of Gruyère and the caramelized onions.

Then more Gruyère.

Top with another slice of bread and make sure there is butter on the outside of that one, too.

Slowly cook so that the cheese melts without the bread burning.

I used the warm onion pan to press the sandwich like a panini maker.

Remove the sandwich to a cutting board and let it rest a few seconds before cutting.

I think I lasted about half of a second.

Oh my goodness.

Rich, comforting, delicious.
