These breakfast tacos are always a huge hit around here.
Like with all tacos you can tweak them to suit your taste.
I used Green Chili Corn Tortillas — I just can’t get enough of them lately.
If you have a taco holder you can use that, if not an upside-down muffin pan works really well.
Brown the sausage — I used Hot Italian Sausage.
Scramble a couple of eggs:
And shred the cheese of your choice.
I used Pepper Jack.
Then start layering it up:
Toss the tacos into a 400F oven until the cheese is melted.
You can top them with avocado, tomatoes, salsa, cilantro, anything!
Breakfast Tacos are a tasty way to mix things up.
The best part… they are ridiculously easy.
