Fresh Berries with Mascarpone Cream
Most of you know that I’m not a baker.
Baking cookies, cakes, brownies, bread, etc. requires measuring and I don’t like to do that.
I do like to Taste & Add. That means I taste and add ingredients until something tastes the way I want it to taste.
That’s why Fresh Berries and Mascarpone Cream is my go-to dessert.
All you need is mascarpone, heavy cream, powdered sugar, pure vanilla extract and fresh berries.
The other night I used strawberries, blueberries, and raspberries.
Whip the 8 ounce container of mascarpone:
Add about a cup of heavy whipping cream:
Then about 1/2 cup of powdered sugar:
This is where you Taste & Add.
I added more powdered sugar and vanilla extract.
Whip until thick:
Now all you have to do is add the cream and berries to a glass or bowl:
You can neatly layer the two if you want but I like to dollop:
Add cream then berries then cream then berries — you get the idea.
And that’s all there is to it.
Top with a little mint… and voilà !
This dessert is perfect for an elegant brunch, a summer BBQ, after a heavy meal…
Or for a midday snack in the middle of the week just because you deserve it.
- 8 oz Mascarpone Cheese
- 1 C Heavy Whipping Cream
- ½ C Powdered Sugar
- 1 tsp Vanilla Extract
- Strawberries, blueberries, raspberries (or any berry combination)
- Whip the mascarpone.
- Add the heavy cream and whip.
- Add the powdered sugar and vanilla extract.
- Whip until thick.
- Taste and add more sugar or vanilla, to taste.
- Alternate the cream and berries in individual glasses or bowls.
- This will make about 4-5 individual desserts.
