Pão de Queijo (“cheese bread” in Portuguese) is a small, airy, cheesy roll:

They are made with tapioca flour:

So if you are one of the many who avoid gluten, this is a bread you can eat!

And it’s a cinch to make.

Simply throw tapioca flour, milk, an egg, olive oil, grated cheese, and salt into a blender:

And pulse until it is smooth.

Spoon the batter into a greased mini muffin tin:

And bake for about 20 minutes or until they are puffy and golden brown.

I like to eat these with just about everything.

But most of the time I just eat them on their own with a little butter.

One time I cut them in half:

And made a sandwich with leftover Beef Ribs:

Pão de Queijo

Pão de Queijo ("cheese bread" in Portuguese) is a small, airy, cheesy roll.
Ingredients
  • 1½ cups tapioca flour (tapioca starch)
  • ⅔ cup milk (or half and half)
  • 1 egg, at room temperature
  • ⅓ cup olive oil
  • ½ cup grated cheese of your choice, packed (I use Gruyère)
  • 1 teaspoon salt
Instructions
  1. Preheat the oven to 400°F.
  2. Grease a mini muffin tin.
  3. Put all of the ingredients into a blender and pulse until smooth. (Makes 2 cups of batter)
  4. Spoon the batter into the mini muffin tins, about ¾ full.
  5. Bake for 20 minutes.
