Swordfish with Tarragon and Lemon

Swordfish marinated in tarragon, garlic and lemon, quickly grilled, and then topped with freshly squeezed grilled lemon juice.
Ingredients
  • 2 Swordfish Steaks
  • ½ Cup Fresh Tarragon
  • 2 Cloves of Garlic
  • 1 Lemon, juiced
  • ¼ Cup Olive Oil
  • 2 Lemons, cut in half
Instructions
  1. Wash and dry the swordfish steaks and set aside.
  2. Put the tarragon, garlic, lemon juice, and olive oil into a food processor and blend well.
  3. Add the swordfish to the marinade and make sure the fish is evenly coated. I use a zip-top bag but a shallow dish will also work.
  4. Marinate in the refrigerator for 30-45 minutes. *If you’re going to marinate it longer, leave out the lemon juice.
  5. Remove the swordfish from the marinade and season with salt and pepper.
  6. Grill the swordfish at 400F, direct.
  7. Add the cut lemons to the grill, cut side down. It's okay if you don't have two-tiers, just put them to the side.
  8. Cook the swordfish for 4 minutes on the first side with the lid closed.
  9. Flip the fish and close the lid and vents and dwell for 4-5 minutes.
  10. Serve with the grilled lemons.
