Pão de Queijo

- 1½ cups tapioca flour (tapioca starch)
- ⅔ cup milk (or half and half)
- 1 egg, at room temperature
- ⅓ cup olive oil
- ½ cup grated cheese of your choice, packed (I use Gruyère)
- 1 teaspoon salt
- Preheat the oven to 400°F.
- Grease a mini muffin tin.
- Put all of the ingredients into a blender and pulse until smooth. (Makes 2 cups of batter)
- Spoon the batter into the mini muffin tins, about ¾ full.
- Bake for 20 minutes.
