Pão de Queijo
Pão de Queijo ("cheese bread" in Portuguese) is a small, airy, cheesy roll.
  • 1½ cups tapioca flour (tapioca starch)
  • ⅔ cup milk (or half and half)
  • 1 egg, at room temperature
  • ⅓ cup olive oil
  • ½ cup grated cheese of your choice, packed (I use Gruyère)
  • 1 teaspoon salt
  1. Preheat the oven to 400°F.
  2. Grease a mini muffin tin.
  3. Put all of the ingredients into a blender and pulse until smooth. (Makes 2 cups of batter)
  4. Spoon the batter into the mini muffin tins, about ¾ full.
  5. Bake for 20 minutes.
