Bacon Egg Avocado Cups
If you are looking for an elegant and simple breakfast or brunch idea, this is it!
  • Avocados
  • Eggs
  • Bacon
  • Salt and pepper, to taste
  • Chives, optional
  1. Preheat oven to 350F.
  2. Cook the bacon.
  3. Cut the avocados in half and whack the pit with the sharp side of your knife.
  4. With a slight twist, the pit will come right out.
  5. Scoop out a little bit of avocado to make room for the egg.
  6. With a small spoon, gently loosen the avocados from their skin.
  7. Generously season with salt and pepper.
  8. Cut the bacon slices in half and shimmy them in-between the avocado skin and pulp.
  9. Do this all the way around the avocado.
  10. Crack an egg into a small bowl.
  11. Gently pour the egg into the avocado where the pit once was.
  12. Season the egg with salt & pepper
  13. Bake the cups at 350F for about 20 minutes — more or less depending on how you like your eggs.
  14. Sprinkle with fresh chives and serve.
