Buffalo Burgers
Have you ever had a Buffalo Burger?
Ground buffalo meat is leaner than ground beef and I think it has more flavor.
I cook them on my Big Green Egg similar to the way I cook beef burgers.
One difference is I wrap the buffalo patties in bacon:
And not just because I love bacon.
Honest!
I think the bacon keeps the lean meat from drying out.
Season the patties with salt and pepper and cook over a high heat for about 2-3 minutes:
Or until you get a good sear:
If you use toothpicks to secure the bacon around the burgers, make sure you soak them in water ahead of time or they will burn on the grill.
Sear the other side for about 2 minutes and add your cheese of choice:
Now close the lid and all of the vents on the cooker and let the buffalo burgers dwell for about 10 minutes.
Basically, I am shutting the grill off and only allowing the existing heat to continue cooking the burgers.
Everyone has a favorite way to dress a burger.
My favorite way is with pickles, onions, and ketchup:
This burger was super juicy and incredibly messy.
We went through several napkins and I probably could have used a bib.
What a delicious way to transition from a busy workday, to a chilled out night at home.
