Steak Tacos
Tacos must be one of the easiest meals to make. I think that is why it is one of the top go-to meals for a family.
It’s easy and flexible and you don’t have to worry about pleasing everyone.
Simply put all the toppings in separate bowls and let each person create their own personal taco.
I used Flank Steak the other night:
I marinaded it in a mixture of tequila, fresh lime juice, chili powder, and olive oil:
I like to use a big zip top bag:
Once you add the ingredients, close up the bag and set it aside until you are ready to grill:
I kept the toppings pretty simple with cabbage, lime juice, and of course, cilantro:
I thinly slices the cabbage, wedged the limes, and put them in a couple of my favorite little bowls:

Once the fire in my Big Green Egg was nice and hot, I tossed on the flank steak:
Try to remove as much of the marinade as you can before adding it to the grill.
A dry steak will sear much better than a wet one.
Flank steak is thin so it is a very quick cook.
Once both sides are seared, let it rest so the juices can distribute evenly.
Slice against the grain:
Then, let everyone go crazy with toppings:
Each one you make can be a little different from the last:
If there is any Flank Steak leftover use it for sandwiches the next day:
